Spring Radish Salad

Ingredients

·1 bunch of red radishes (about 1 1/2 cups), stemmed and finely chopped
·1/2 cup fresh parsley, stemmed and finely chopped
·1 tablespoon extra virgin olive oil
·1 tablespoon fresh lemon juice
·1/2 teaspoon salt
·1/4 teaspoon black pepper

Directions

Finely cube the radishes into small pieces. Add the cubed radishes and finely chopped parsley to a small salad bowl. Add the olive oil, lemon juice, salt and pepper. Toss gently to combine. Taste test and add a little more lemon juice and salt, if necessary. Serve and enjoy!

The variety is fantastic. Produce is incredibly fresh and the salad leaves are delicious. There is good flexibility to be able to order weekly or on an ad hoc basis.
